Makes 15-18 latkes (pancakes).
Ingredients:
3 cups cottage cheese
6 eggs
3 TBsp sugar
1/2 tsp. vanilla
1 cup flour
Safflower oil for frying
Maple Syrup
Cinnamon Sugar
Directions:
In large bowl beat eggs until fluffy. Add cottage cheese, sugar, vanilla and flour.
Pour 1/2 inch oil into a 10 -12 inch frying pan over medium-low heat. When oil reaches about 300˙, scoop 1/4 cup of cheese mixture from the bowl, then gently drop it into hot oil.
Cook 3 or 4 pancakes at a time (do not crowd pan) loosening from bottom as needed, until undersides are golden brown, about 2 minutes.
Gently turn and cook until other side is golden brown, 1 to 2 minutes longer.
Transfer onto paper towels to drain briefly. Keep warm.
Serve hot, with maple syrup and/or cinnamon sugar.
